Ingredients

  • 2 green plantains, peeled and cut into 1-inch cubes
    1/4 cup olive oil
    1/4 cup water
    1/4 teaspoon garlic powder
    1/4 teaspoon onion powder
    1/4 teaspoon black pepper
    1/4 teaspoon salt
    1/4 cup chopped fresh cilantro
    1/2 cup bread crumbs
    1/4 cup sausage, cooked and crumbled
    1/4 cup chopped onion
    1/4 cup chopped green pepper
    1/4 teaspoon dried oregano
    1/4 teaspoon dried thyme
    1/4 cup chicken broth

Directions

  • Preheat oven to 350 degrees F (175 degrees C).
    Put the plantains in a large pot filled with water.
    Bring the water to a boil. or until the plantains are soft.
    Drain the water from the pot.
  • Mash the plantains in a large bowl with a fork. Add olive oil, water, garlic powder, onion powder, black pepper, and salt to the plantains and mix well.
  • In a separate bowl, combine bread crumbs, sausage, onion, green pepper, oregano, and thyme.
    Add bread crumb mixture to the plantain mixture and mix well.
    Add chicken broth and mix well. Transfer stuffing mixture to a baking pan
  • Bake for 20-30 minutes, or until stuffing is heated through and golden brown.
    Serve hot and enjoy!
